Healthy "Donut" Snacks with Fruit and Yogurt

Who doesn’t love a donut? I’m ALWAYS on the hunt for new ways to get my kids eating fruits and vegetables. And these fruit and yogurt “donuts” are a perfect summer treat. You make them with apple slices. GENIUS!! I found the recipe on Pinterest where I find all my recipes. I’m a visual person so scrolling through food boards is my favourite way to meal and snack plan.

 

This one is SUPER easy. What you’ll need:

 

2 large apples (I prefer Honey Crisp because they’re sweet and firm)
Non-Dairy Yogurt for Vegans or just regular yogurt 
Blueberries (about a handful)
Strawberries (just 2 or 3)
1 Kiwi
Walnuts or Granola for topping

 

Slice your apples across the core (opposite the way you would normally slice) in about half inch sections. Use a quarter-sized tool to core the middle. I don’t have a apple corer so I popped the top off my turkey baster and used the top end to make holes.

 

Smear yogurt on your apple slices, just like cream cheese on a bagel. Top with sliced berries and kiwi and sprinkle crushed walnuts or granola. I prefer walnuts because they’re rich in antioxidants and omega-3s.
